Courgette & Soft Cheese Frittata

A delicious and easy frittata using courgettes. You can swap the sweetcorn for peas or use a cream cheese flavour to suit your taste. Its good to experiment and a great lunchtime idea.


Ingredients

  • Calorie controlled cooking spray. (Or use oil and add the extra calories.)

  • 1 small red onion, sliced.

  • 1 garlic clove, crushed.

  • 200g courgettes, chopped into chunks.

  • 4 heaped tbsp sweetcorn. (or peas if you prefer)

  • Handful of fresh parsley leaves, chopped.

  • 6 large eggs, beaten.

  • 100g lighter onion & chives soft cheese.

  • Mixed salad, to serve.

Method

  1. Mist a frying pan with the cooking spray or use oil then add the onion. Fry, stirring for 5mins or until softened, then add the garlic and courgettes. Fry, stirring occasionally for a further 6-8mins or until golden.

  2. Add the sweetcorn and parsley. Season the beaten eggs with freshly ground black pepper and pour over the vegetable mix, then add the soft cheese in spoonful's. Cook over a medium heat for 4-5mins or until the bottom is set. Transfer to a preheated grill and cook for 5-8mins or until golden and set.

  3. Cut into 4 portions and serve with a mixed salad.
